Hokkaido has many conveyor belt sushi restaurants that are just as delicious as high-end sushi restaurants.
Among them, Kushiro is one of Hokkaido's leading food havens, with fresh fish being landed there all year round.
This time, I went to the original "Kushiro Shinbashi" branch of "Matsuriya," a popular restaurant that originated in Nemuro and grew up in Kushiro, for lunch.

1. What is "Matsuriya," a brand originating in Nemuro and raised in Kushiro?

Matsuriya is a conveyor belt sushi restaurant that originated in Nemuro and grew up in Kushiro.
In 2001, Matsuriya's first store opened on Kushiro Shinbashi Avenue.
Our headquarters are in Kushiro, and we have one store in Nemuro, three stores in Kushiro, three stores in Tokachi, and two stores in Sapporo.
The store's name, "Matsuriya," written in hiragana, was chosen because the owner wanted to create a place where everyone could have fun together, like at a festival, and it's easy for both adults and children to understand and read.

The store is bright, cheerful, and lively.
We also look forward to the fresh ingredients that will be served.
2. Matsuriya's menu has 250 items!

Matsuriya has a wide variety of menu items.
We are committed to using private label brands for our rice, vinegar, wasabi, and soy sauce.
They offer fresh raw ingredients mainly from eastern Hokkaido and directly from Kyushu, along with creative sushi, with a total menu of around 250 different items.
The prices are also reasonable.
Just looking at the menu makes me happy and excited.

Each of the four seasons has its own seasonal ingredients.
First, we recommend finding and trying some seasonal items from the menu.
Because there are so many menu options, you might find something you want to eat towards the end of your meal, but then be too full to eat it.
First, take a look at the menu and decide what to order based on your appetite.
3. Conveyor belt sushi lunch

After looking through the menu, it's finally time to enjoy some conveyor belt sushi!
Besides eating the sushi that comes around on the conveyor belt, you can also order by writing your order on an order form.

I placed my order by filling out this order form.

After drinking some tea and waiting for a while, the miso soup (complimentary) was brought to our table.


The first dish is "salmon".
Our most popular item since opening! This size is standard for Matsuriya.
These are our pride and joy, ingredients that we are committed to using only the finest and freshest ingredients.
Since the fish is prepared in-house, every part of it is used, from the meat attached to the bones to the bone-in meat for the soup, so nothing goes to waste.
It's so delicious it melts in your mouth.

There are so many options, it's hard to choose!

Second dish: "Bruce Lee (Three kinds of blue fish platter)"
*From left to right in the photo: "Kushiro-produced Pacific saury," "Kushiro-produced sardine" in the middle, and "domestically produced marinated mackerel" in the back.
As the name Bruce Lee suggests, it packs a punch.
It's such a luxury to be able to eat fatty blue fish raw! The ginger and green onion condiments are absolutely perfect.

The third dish is "Kushiro's specialty, whale meat."
You can experience the traditional food culture of Kushiro, the city of whales.
It's tender, has no unpleasant odor, and a mild flavor.

Fourth dish: "Scallop roe"
*Available only from December to June (limited quantities)
Fresh, live "Gokkatsu scallops" delivered directly from the Notsuke Peninsula.

I was drawn in by the menu description that said it was as sweet as sea urchin.
It truly had a melt-in-your-mouth sweetness, just like sea urchin.
These seasonal items, sourced directly from the producers, aren't always in stock, so if you see them on the menu, be sure to try them!

The fifth and final dish is "Boiled conger eel from Kushiro."
The flesh is fluffy and tender, with a melt-in-your-mouth richness of fat, and it's also packed with nutrients.

This time, I ordered mainly sushi ingredients from Kushiro and eastern Hokkaido.
Every single item on the menu was so delicious that I wished I could have ordered another plate if I had more room in my stomach.
4. Popular menu items at "Matsuriya"

We asked the manager about their most popular menu items. Hopefully, this will help you choose your toppings!
(Kushiro brand) Carefully selected "Kushiro-produced sardines" with plenty of fat, and "Kushiro-produced saury," a recommended product of the Kushiro City Fisheries Cooperative Association.
(A bounty from Eastern Hokkaido) "Live whelks from Eastern Hokkaido" boast a firm texture and the appealing aroma of the sea.
(A bounty from Hokkaido) "Hokkaido-produced live surf clams" with just the right texture and sweetness.

Tokachi's Bounty) "Burdock Sticks" made with organically grown burdock from Memuro Town, Tokachi.

Dishes featuring avocado, such as "Three kinds of forest butter," "Avocado salad," and "Tuna and avocado carpaccio," are also very popular.

Our signature salmon, our large, hand-peeled sweet shrimp, and our exceptionally fresh, satisfying red shrimp are all highly praised.
The above menu items are also popular for takeout.

Depending on the season, you may be able to enjoy items not listed on the regular menu, such as "true cod roe," "cod roe soup," "live-caught flounder from Kushiro," "homemade crab miso," and "live octopus from eastern Hokkaido," depending on what's available that day.
The "homemade crab miso" is made using red snow crabs from Kushiro, which are only available about once every three days.

5. Popular desserts you'll want to eat after your meal!

They also have a wide variety of desserts.
Since there's always room for dessert, let's enjoy some sweet treats as well.
Our most popular desserts are "Homemade Pudding" and "Homemade Chocolate Pudding."
This rich and creamy treat uses plenty of milk from Betsukai, which boasts the highest milk production volume in Japan, and mascarpone cheese from Tokachi.
Both are limited to 50 pieces per day.
Another great point is that they offer a variety of homemade desserts that make the most of ingredients from Hokkaido.

Final thoughts

Matsuriya has customers who have been coming to the store for three generations.
You can watch the chefs at work from the counter.
