Now, this might come as a surprise, but did you know that approximately 70% of the wheat produced in Japan comes from Hokkaido? The harvested wheat is processed into flour, which is then used as an ingredient for bread. Also, Hokkaido is a dairy farming region, so the butter made from fresh milk is also a fine local product.
That's right, the bread made with domestically produced wheat that you eat in Hokkaido is truly a case of local production for local consumption! There are many bakeries in Sapporo that are particular about using Hokkaido-grown wheat. This time, we'll bring you information about delicious bakeries in Sapporo, straight from the source!

1. An unexpected entry into the bread industry! Exquisite ROYCE bread!?
ROYCE chocolate is a classic souvenir from Hokkaido. Many of you are probably familiar with it.
That's right, ROYCE, famous for its chocolates, also runs a bakery. There are only three stores in Sapporo, so its name recognition is still developing. Even among Sapporo residents, there are still many who say, "I didn't know ROYCE ran a bakery!"
I had imagined that since it's ROYCE, their specialty would be chocolate-based breads...but when I stepped inside, I was surprised to find it was just a regular bakery. The lineup was impressive, ranging from hard-crusted breads to sliced bread and savory breads.
Of course, the taste is also top-notch. Residents around the store even buy ROYCE's bread regularly.
A popular item at every store is the raw chocolate croissant (185 yen). The exquisite chocolate that overflows from the crispy pastry is not overpowering, not too sweet, and not cloying, which is great.
It's filled with plenty of ganache inside!
This is a Gouter (194 yen) with a whole bar of Royce's chocolate sandwiched inside! A must-try for chocolate lovers.

2. Vergine Baccano (relocated), a renowned shop that shines with its dedication to wheat.
Vergine Baccano is located very close to Jozankei, a town known for its hot springs.
Vergine Baccano is a bakery that prides itself on using ingredients sourced from Hokkaido and baking flavorful bread in a stone oven.
They are particular about using Hokkaido-grown ingredients, not only for the wheat but also for the vegetables, so you can eat with peace of mind. It's also nice that they have a cafe attached, so you can eat the bread right there.
The bread, baked in their prized stone oven, is crispy yet chewy, and their hard-crusted breads, in particular, are gaining popularity through word of mouth. Pasta is also served in the cafe area, so it's a great option for lunch as well!
If you're going to Jozankei, why not stop by on the way?

The shop also has an eat-in area, and it's always bustling with customers buying bread and others enjoying their purchases at their leisure.
The number one item at this shop is undoubtedly the croissant. The butter made from fresh Hokkaido milk enhances its flavor.

Aesop Bakery is perfect for everyday use and has been a beloved local spot for 15 years. In 2010, it was named the number one bakery by a local women's magazine. Their most popular item, "Paris Morning," is a croissant with a striking buttery flavor, so popular that almost every customer buys it. A gentle sweetness spreads in your mouth, but according to the owner, no sugar is used. You'll be surprised by the natural sweetness of the flour and butter!
And above all, the charm of Aesop Bakery is that "there's always freshly baked bread available whenever you go!" Their dedication to baking the bread in small batches without sparing any effort may be the biggest secret to their popularity among locals.

Donguri is incredibly well-known among Sapporo residents. The shops open early in the morning, so they're bustling with students and commuters from early on. Each of the seven Donguri stores in Sapporo has its own original products, so a "Donguri tour" is a fun activity to try.
The most popular item at Donguri Fudo is the chikuwa bread. The chewy bread is filled with chikuwa (fish cake), tuna, and mayonnaise. It's simple, but undeniably delicious, and has a nostalgic taste.
They also have a strong commitment to wheat, and offer bread made with the rare "Kitano Kaori" wheat. While bakers praise Kitano Kaori as "the best wheat for making bread," it is an extremely rare wheat with low production volume due to the difficulty of cultivation. Be sure to try bread made with Kitano Kaori at this famous local shop.
